This Chunky Monkey Nice Cream only contains 3 pantry ingredients and is an indulgent treat you can feel good about eating!
This month’s recipe redux theme is Spring Clean the Kitchen and is challenging us to use 3 ingredients we already have in our kitchen. I am all about this theme since I love trying to create recipes to use up food in my fridge and pantry. For an extra challenge I wanted to create something that also had only 3 ingredients and would likely be in just about everyone’s pantry.
My 3- Ingredient Chunky Monkey Nice Cream fits the bill. I always have frozen bananas, walnuts and some sort of dark chocolate on hand for baking. Don’t have walnuts? You could easily sub in any nut like almonds, pecans or peanuts. This Chunky Monkey Nice Cream tastes just like my favorite Ben and Jerry’s flavor but with a lot less saturated fat and an actual serving of fruit (not just banana flavor!). This treat also provides a serving of heart healthy omega-3 fatty acids from the walnuts and a dose of antioxidants from the chocolate.
To make this easy treat simply freeze any over-ripe banana you have on hand, once frozen add to a blender or food processor and blend until smooth. Mix in walnuts and chocolate chips and enjoy or store in the freezer for later! If eating later I recommend leaving it out for 10 minutes before eating to soften up a bit.
- 2 frozen bananas
- ¼ cup walnuts
- ¼ cup mini semi-sweet chocolate chips
- To a food processor add the frozen bananas. Process for about 30 seconds or until a smooth consistency.
- To a small bowl add bananas, walnuts and chocolate chips. Mix to combine.
- Enjoy or place in an air tight container and store in the freezer.
