I am finally back! After a fun and exciting adventure halfway across the world and back (to India, Thailand and Qatar) we are finally back and I am ready to share some yummy recipes inspired by our adventures. This first recipe is actually inspired by a refreshing drink I had on a layover in Doha, Qatar. Not a typical spot to vacation, but we were glad to get a chance to stretch our legs spend a few hours in the Middle Eastern country to see the sites and taste the food. The drink I had was a lemon mint drink and was especially hydrating after flying !
To recreate this drink I decided to use another one of my favorite go to juices, Pomegranate juice. What I love most about POM Wonderfuls 100% Juice is that each 8 oz bottle is packed with powerful antioxidants from two whole-pressed pomegranates. This means the not only are you getting the antioxidants and other nutrients from the fruit but also from the pith and rind. POM wonderful is also a great source of potassium, each 8 ounce bottle contains the same amount of potassium from a medium banana. Perfect for getting my muscles back and working after sitting for far too long on a plane.
This drink is equal parts refreshing, delicious and energizing. Just what I need for getting back to work after a nice break and R&R. And despite the cool temperatures here in Boston, drinking this Pomegranate Orange Mint Mocktail brings me write back to those warmer temperatures.
This drink is also great for your little ones! Not only is it packed with nutrients for your growing and developing child but it great way to expose them to flavors they may not be used to yet, like mint. You can also get them involved in preparing the beverage by having them help you measure (if they can) and pour the POM juice and ice into the blender, squeeze the juice out of the Halos, and counting out the sprigs of mint.
- 1 cup POM Wonderful 100% Pomegranate Juice
- 2 Halo oranges, juiced
- 8 sprigs of mint
- 2 cups of ice
- Add all ingredients to a blender. Blend until smooth.
