The one frozen fruit you can find in our freezer all year long is Wild Blueberries their intense blueberry flavor makes for delicious smoothies that are both tart and sweet. Wild Blueberries are also a nutrient powerhouse packed with antioxidants, and contain 2x the antioxidant capacity of larger, cultivated blueberries. Research indicates potential health benefits from consuming Wild Blueberries including gut health, diabetes, cancer and brain health. They are individually quick frozen after harvest, which helps lock in their nutrients and flavor. These blueberries truly do grow wild in the barrens of Maine and Eastern Canada and have been there for over 10,000 years. For my Wild Blueberry smoothie I wanted to create something light and refreshing that I could enjoy as a afternoon snack or sweet treat. I am a huge fan of the combination of blueberries and lemon. The lemon helps brighten up the blueberry flavor for a sweet yet slightly tart treat. I am also all about coconut recently, probably because I am getting sick of winter and need a little taste of summer.
For a creamier smoothie I added in a frozen banana and some yogurt for protein. a The combination is refreshing and has me feeling like I’ve been transported away from the cold Northeast winter straight to the beach!
- ¾ cup Wild Blueberries
- 1 frozen banana
- ½ cup non-fat vanilla Greek or Skyr yogurt
- ½ cup unsweetened almond coconut milk
- juice and zest of ½ lemon
- 1 tablespoon unsweetened coconut flakes
- Add all ingredients to a blender and blend until smooth
